Hawaiian Pulled Pork Sliders with Kaipo’s Pineapple Slaw
Pork 5-pound pork shoulder
½- Tablespoon Sriracha Hot Chile Sauce (substitute mild or medium hot red chilis to reduce sodium)
1- Tablespoon olive oil
2- Tablespoons Low Sodium Katchup
1- Tablespoon Unsalted butter
1 ½- Tablespoon Hawaiian Sea Minerals™
½- cup purple onion (minced)
2- clove garlic (minced)
½- cup Original Koloa Kauai Gold Rum (use equivalent gold rum)
½- cup chicken broth
1 ½- cup diced and crushed fresh pineapple w/juice (canned will do)
½- tbsp. Chinese 5 Spice
½- cup cider vinegar
1-10 oz. can Mandarin Orange w/juice (diced)
King’s Slider Rolls (or other slider rolls of your choice)
Place pork shoulder in large frying pan with olive oil and unsalted butter and sear on all sides.
Place pork shoulder in crockpot and add all the ingredients.
Let cook on low heat until tender (about 6-8 hours)
Take out of crockpot and shred.
KAIPO'S PINEAPPLE SLAW INGREDIENTS:
4 cups Cole Slaw Mix from your local market
½- Tablespoon Hawaiian Sea Minerals™
¼- Tablespoon ground ginger
¼- Tablespoon nutmeg
¼- teaspoon black pepper
1 Cup crushed pineapple (drained)
½ Cup low sodium Mayonnaise or Sour Cream to reduce calories and sodium (or, you can follow the following recipe from scratch)
2 large eggs (PASTURIZED ONLY)
2 teaspoons ground mustard
¼ teaspoon Hawaiian Sea Minerals™
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon garlic powder
2-3 Tablespoons apple cider vinegar
1-2 cups canola oil
Combine all ingredients
Pour combined ingredients over the cabbage and toss.
Slice Slider Rolls into two halves.
Place a generous portion of Pulled Pork on one half of roll.
Top with Kaipo’s Pineapple Slaw
